This week we are making Lemon, Blueberry and Blue Poppy Seed muffins ……..

Ingredients you will need

2 cups almond flour

3 tablesponns of rapadura sugar

1 teaspoon GF baking powder

1 -2 tablespoons blue poppy seeds

1 x lemon

5 x organic eggs

1 teaspoon vanilla paste

1/4 cup organic full fat butter or you can use coconut oil

fresh or frozen blueberries

Method

Preheat the oven to 165

Mix all of the dry ingredients well in a bowl, and grate the rind of the lemon in there too. Melt the coconut oil in a pan, meanwhile whisk the eggs together with the vanilla essence and juice of the lemon. Add the wet ingredients to the dry ingredients and finally fold in your blueberries.

Add a heaped tablespoon of the mixture to each muffin case – it should make 12 – 16 muffins – put them in the oven for 20 -25 minutes or until golden on top ! They go nicely with a dollop of our lemon crème fraiche on the top !

Lemon crème fraiche

3/4 cup Organic creme fraiche

zest 1/2 lemon

2 teaspoon maple syrup
